Cocoa Pink Cuplets

Is it a muffin or a cupcake? Looks like a muffin. Tastes like a cupcake without the frosting.

 But actually, I like to think of this tasty morsel as the muffin version of chocolate chip cookies.

My mother used to make Cocoa Pink Cuplets all the time when we were kids …
Back in the day when kitchens looked like the photo above.
 Cocoa Pink Cuplets are yummy in the morning with a Cup o’ Joe,
or later in the day as dessert after lunch or dinner. (Recipe is at the end of this post)
Start with a little white sugar …
Add some shortening and eggs …
You’ll need chocolate chips … semi-sweet or milk chocolate will do.
Mix it all with water, baking soda, flour, vanilla, salt, and a touch of cocoa, which provides the “pink” color.
Spoon the thick batter into muffin cups and top with your chocolate chips and chopped nuts.
Normally I use walnuts, but a friend sent me pecans from his father’s yard so I used those instead.
Take them out of the oven about 25 minutes later and they look like this. Mmmmmm.
How do you handle a hungry man? Make him wait until the photo shoot is finished!!

Cocoa Pink Cuplets Recipe
2 cups sifted flour

1 tablespoon cocoa
1 teaspoon salt
1 1/4 cups sugar
3/4 cup shortening
2 eggs
1 teaspoon vanilla
1 teaspoon baking soda
1 cup cold water
1 (6 ounce) package semi-sweet chocolate chips
1/2 cup chopped nuts

Preheat oven to 375 degrees.

Sift together the flour, cocoa, salt. Add the sugar gradually to the shortening, creaming well.
Blend in the 2 unbeaten eggs and vanilla. Combine the baking soda and water.
Add alternately with dry ingredients to creamed mixture beginning and ending with dry ingredients.
Blend thoroughly after each addition with the mixer on low speed, or by hand.

Line muffin pans with muffin paper cups. Fill cups two-thirds full.

Sprinkle 1 cup (or more if you like) of the chocolate chips and the nuts over the cup cake batter.
Bake in 375 oven for 20-25 minutes
