Easy Oreo Cookie Ice Cream Pie

The last few days I've had the grands over night while their mom and dad are in Cabo San Lucas. I thought they'd enjoy an Oreo Cookie Ice Cream Pie and decided to whip up a couple for them. Now normally I like to make recipes from scratch but I needed something fast and easy for these two young-uns so I broke down and used store bought ingredients to make the pies. The only problem is that the original recipe is 737 calories per serving!  I massaged the recipe ever so slightly to bring the calorie and fat count down. After all, I want to be able to enjoy … [Read more...]

Super Simple Peach Cobbler

Summer is my favorite season and part of the reason I love it so much is due to the freshness of fruits and vegetables this time of year. I love snacking on fresh, juicy peaches from the farmer's market and enjoy cooking them up in recipes like this simple peach cobbler. A recipe doesn't have to be complicated to be good and this sweet concoction doesn't disappoint. (Recipe below - you absolutely MUST use self-rising flour!) Just a few … [Read more...]
