Hot Chocolate with Peppermint Marshmallows

My son is convinced this is the worst winter he can ever remember. I don’t know if that’s true but it’s either snowing, bitter cold, or the wind is whipping up skirts everywhere! Tomorrow we’re supposed to have wind chill temperatures of 20 below or worse! At least we can comfort ourselves with a piping cup of hot chocolate with peppermint marshmallows!  The recipe is at the end of the post …

Hot Chocolate with Peppermint MarshmallowsI’m not a fan of instant cocoa … I prefer the flavor of making hot chocolate from scratch.

 

Peppermint Marshmallows for Hot ChocolateI thought I’d kick up the flavor with easy-to-make peppermint marshmallows.

 

Crushing peppermints for hot chocolateUnwrap peppermint candies and crush them with a mallet or rolling pin.

 

Peppermint Marshmallows for Hot CocoaLightly wet the marshmallow with water or a bit of milk, then roll in the crushed peppermint.

 

Peppermint Marshmallows for CocoaUse the jumbo size marshmallows and make 2 to 3 for each cup of cocoa.

 

Hot Chocolate with Peppermint MarshmallowsAs the marshmallows and peppermint melt, they’ll flavor the hot chocolate.

Mmm. Hot Chocolate with Peppermint Marshmallows was a comforting drink on this frosty day!

 

Hot Chocolate with Peppermint Marshmallows

4 tablespoons sugar
4 tablespoons cocoa
Dash of salt
2 cups milk
1/2 teaspoon vanilla extract
4-5 jumbo marshmallows
10 peppermint candies, crushed

Lightly wet the outsides of the jumbo marshmallows with water or milk, then roll in crushed peppermint. Set aside. In a medium sized saucepan, mix together sugar, cocoa, and salt. Turn heat on to medium. Slowly add the milk, blending well. Add vanilla and heat mixture until hot but not boiling. Pour into 2 mugs and set 2 to 3 peppermint marshmallows to float on top. Makes 2 servings.

  1. Yes it’s been bitter. Like “old fashion Winters “of the past but I don’t feel it’s truly Winter without shlepping thru the frozen Tundra of icy Kane Co. Walking carefully thru the ice, snow to less & less vendors,& choices! Among what barns were open . I miss not finding rusty farm items & repurposing them.While waiting to see my first crocus,popping up thru the snow looking for his companion the Muscari,such a sight! This is year 2 for me without Winters in St. Charles….oh Spring so close yet today -27′ so far away… M.e.Burke…..hot chocolate sounds good ….

  2. It’s right up there with the other winter I called the worst of my life. The main difference for me is that this year I can stay in most of the time – the other one i had a job I had to go to – and had to get out and shovel the lane open so I could get there!

  3. What a great Idea! I bet this taste a whole lot better that the Peppermint flavored Marshmallows I have been using.They really do not have a strong flavor.
