Mission Fig and Walnut Salad with Manchego Cheese

  • 4 teaspoons balsamic vinegar
  • 2 teaspoons red wine vinegar
  • salt to taste
  • fresh ground pepper to taste
  • 1 handful green leaf lettuce torn into bits
  • 1 handful red leaf lettuce torn into bits
  • 1 small handful arugula stems removed
  • 3 tablespoons extra virgin olive oil
  • 6 to 8 figs sliced into rounds
  • 1/2 cup large walnut pieces
  • 1/4 cup Manchego cheese shaved


  1. Combine the vinegars, oil, and 1/8 teaspoon salt. Whisk together and set aside. Mix the greens together with half the dressing. Taste the salad and add more dressing, if desired. Toss the figs and walnuts into the salad. Sprinkle cheese shavings on top and serve.
