Would you believe me if I told you I never ate guacamole until a few years ago?
It’s true! Avocados were never a part of my childhood diet …
we never had them in our house. Ever.
And I loved it!! Which then led me to eat some guacamole.
It’s secret ingredient is low-fat sour cream.
Hubby likes really hot and spicy food. Me … not so much.
So he agreed to let this batch of guacamole be mild (he added hot sauce to his own serving).
Mild and Creamy Guacamole
1/2 cup light sour cream
1/4 teaspoon cumin
1 small jalapeno, seeded and finely chopped
1/2 large tomato, seeded and diced
salt and pepper to taste
Peel avocados and remove pits, and mash in a medium size bowl. Add sour cream and cumin, and mix until thoroughly blended. Stir in chopped jalapeno and tomato. Squeeze the juice of 2 limes into the mixture and add salt and pepper to taste. Serve immediately or store in the refrigerator in airtight container. (Tip from Hubby: If you want spicier guacamole, don’t remove the seeds from the jalapeno pepper.)
